Abstract

Based on experimental research, technological parameters of holly-leaved barberry (Mahonia aquifolium) berries have been determined, which were used in the extraction process: moisture content, specific, volume and bulk weight, porosi-ty, volume of the layer, and swelling index. Based on the study of the physico-chemical properties of experimental samples, extraction parameters for obtaining liquid extract of holly-leaved barberry berries have been established. Standardiza-tion parameters have been selected, and research of the quality indicators of the obtained extract have been conducted. The thesis is presented on 51 pages and consists of an introduction, literature review, two sections of experimental re-search, conclusions, a list of references, and appendices. The work is illustrated with 12 tables. The bibliography contains 44 sources.
