Удосконалення виробництва сікери медової особливої

Abstract

напівсухого «Сікера медова особлива». У роботі складено опис технологічного процесу отримання сікери з меду та соку агрусу, складено технологічну та апаратурну схеми виробництва. Для удосконалення запропоновано запровадження двох танків для бродіння та доброджування моделі Z 20, ємністю 20 м3 які мають сучасну конструкцію, що дозволить підвищити якість напівпродуктів та готового вина, збільшити розмір серії та вивільнити виробничі площі. Робота складається з вступу, чотирьох розділів, графічних матеріалів, висновків, списку літератури з 30 джерел та додатків. Загальний обсяг роботи становить 66 сторінок, містить 5 рисунків, 6 таблиць та 2 креслення формату А1.

The qualification work is devoted to the improvement of the production of the semi-dry drink "Sikera medova osobliva". The work describes the technological process of obtaining sikera from honey and gooseberry juice, and a technological and equipment scheme of production is compiled. For improvement, it is proposed to introduce two tanks for fermentation and maturation of the Z 20 model, with a capacity of 20 m3 , which have a modern design, which will allow to improve the quality of semi-finished products and finished wine, increase the size of the batch and free up production space. The qualification work consists of an introduction, four chapters, graphical materials, a conclusion, a list of used literature from 30 items and appendices. The total volume of work is 66 pages, 5 figures, 6 tables, 2 A1 format drawings.
