Abstract: Saponins are bioactive plant-derived glycosides with significant pharmacological and industrial potential, but their isolation is complicated by structural complexity [1]. Siraitia grosvenorii (monk fruit, Luo Han Guo) is widely recognised for its antidiabetic, antioxidant, and anti-inflammatory properties, [2], and as a natural sweetener due to triterpene glycosides known as mogrosides, which are 200–300 times sweeter than sucrose and similar in taste to aspartam
