Abstract: Studies of plants of the genus Amaranth show that they contain a balanced complex of BAС (fatty acids, carbohydrates, proteins, tocopherols, phospholipids), which is unique. Sorrowful amaranth (A. hypochondviacus L.), cultivated intensively in European countries, is a potential herbal medicinal raw material. Fatty oil (7%) was found in amaranth seeds, which includes polyunsaturated fatty acids, tocopherol, squalene, riboflavin, vitamins of group D, phytosterols, choline, bile acids, steroids and phospholipids. The fatty oil of amaranth seeds normalizes lipid metabolism, prevents free-radical reactions, has hypocholesterolemic and anti-ulcer effects.
